Kafatek Flat Burr Monolith Grinder
The Mythos One burrs pour great from day one but definitely get better after 10 pounds and continue up to about 35 pounds. On the Mythos One grinder the timed doses started to lock in and be spot on around 30 pounds

The Mythos TiN burrs took a good 30 pounds of beans before they settled down and became rock solid consistent for me

I never understood why the prosumer market pushes the E61 as the Holy Grail. When was the last time, if ever, you saw an E61 being used in a cafe?

A refractometer is not a test for, nor proof of, a unimodal particle distribution. Single dosing "any" grinder will lead to a wider particle distribution than hopper fed. Upgrading from Rocket R58 + Quamar M80
I've found that the darker the roast the closer to the old optimum shot you will want to be. With a light roast, a longer extraction time will be needed to balance the flavors. 40 seconds like you said works well

Go for the Flat! Verve did. At the main downtown Santa Cruz location they replaced their Roburs with 6 Mythos One grinders. And Monolith is using the Mythos One 75mm Tn burrs!
