Used grinders on a budget

Sometimes local espresso techs have leads on used grinders. If you're in Boston I'd hope there are a few you can check with, that's not my area I'm just going by what I saw on your post. Whatever you get plan on buying burrs unless you trust that they have been recently replaced

5 lbs of coffee

That's quite a bit of room in your freezer, but if you can spare the space and like the coffee it works. I've had customers vacuum seal coffee to achieve the same thing. I think that may be a little easier to squeeze into a freezer than jars but it is more wasteful and $$ no doubt. I

Mahlkonig EK43 factory taste

Typically what most use for break in is minute rice, or a knock off. You can also go with grinder cleaner, grindz or which ever other brand has the pill shaped stuff. Can the Niche Zero do French Press?

Well, I haven't had any problem going counter-clockwise with it making sure to turn the metal ring and not the dark plastic ring with the white dot alone.
