Flat, Stale, and Very Profitable: Thoughts on Light Roasted Coffee

"There is no universal standard for the degree to which coffee should be roasted. The North American trade recognizes these different roasts: light, cinnamon, medium, high, city, full city, French, and Italian. The city roast is a dark bean, while full city is a few degrees darker. In the French roa...

Flat, Stale, and Very Profitable: Thoughts on Light Roasted Coffee

I actually do not believe there is a correlation, much less a causal relationship. I believe that the two are largely decoupled, and as such my personal opinion on Loring roasters is probably not relevant to this conversation. Given this, apologies for the distraction from the topic at hand!

Flat, Stale, and Very Profitable: Thoughts on Light Roasted Coffee

Very worthwhile points here. Thank you for raising them. First of all - I would strongly suggest trying to avoid conflating sample roasting and production roasting (even when done to a light roast degree). They are very, very different - and have different needs and definitions of success. That said...

Flat, Stale, and Very Profitable: Thoughts on Light Roasted Coffee

Kudos for realizing what tastes good to you! The good news is that there is a ton of this kind of "traditional" medium roast espresso out there. Have you tried the "Maquina Coffee Roasters Brazil Fazenda Baoika"? It's a lovely single origin that might fit the bill for you

Flat, Stale, and Very Profitable: Thoughts on Light Roasted Coffee

I'll add to the mix... 1. A coffee with profound mold (visible under UV when evaluating the green) and black defect (well over the 1 per 350g limit) sold with the tasting note "marinated over-ripe peaches." The coffee was sold at a premium due to it being "single lot" and was to my taste undrinkable...

Flat, Stale, and Very Profitable: Thoughts on Light Roasted Coffee

This is, perhaps, the single most important sentence in this entire thread to-date. Thank you Luca for perfectly communicating the pain so many of us feel - and the root cause of so many of the issues we're raising. And to make it all worse - not only does nobody hold them accountable, there are inf...

Flat, Stale, and Very Profitable: Thoughts on Light Roasted Coffee

This is a really interesting topic. Thanks a ton to Jim for being willing to raise it. I have a somewhat unique perspective on this whole issue for a number of reasons. First, as most of you know I was a coffee professional and have a strong network in the coffee business world. I understand the per...
