Help with Rocket R 60v expansion outlet

Take it apart, soak it in vinegar. Here's an example of what one looks like: {image} It's possible that the plunger seat is grooved or hardened, or that the expansion valve is improperly adjusted. I'm betting it's stuck open due to scale buildup

Looks like the expansion valve is stuck open, judging from the constant stream from the outlet into the driptray. I would start by checking for scale. {image}

If I understand your point, the steam pressure gauge would indicate it's "at pressure" whether that's a measure of the air/steam mixture or only steam. The latter, of course, is the one "at temperature" that you want for brewing espresso

That's precisely the symptom of false pressure. Air expands more than saturated steam when heated. Therefore, if you have a mixture of air/steam in the boiler, the pressurestat will shutoff before the desired [pure] saturated steam temperature.
