Greetings, The newer Gene Cafe requires that you press down and HOLD the red dial for around 8 to 10 seconds. I don't think this is mentioned in the instruction manual. Greetings, The recent version of the Gene Cafe requires you to press the blue knob at these temperatures within 30 seconds of a beep that can only be heard by dogs or the unit goes into cool down mode that can't be reversed. To put the Gene into e-stop mode you have to hold the red knob
