Pourover brewer...I don't get it.
I've tried it in increments of 5 from 15 to 30 without much changing. I make espresso at the 7-10 range. I'm using water just off the boil. I haven't measured it, but I'm guessing that it's between 200 and 210. The coffee is neither bitter nor sour, so I think I'm in the zone. I

Pourover brewer...I don't get it.
It seems like it should be so simple, but I'm just not getting it. I normally drink Blackcat or Kid-O prepared on my Rocky/Silvia combo, but I thought I'd take a little foray into the world of drip coffee for a change of pace, and for convenience when we have company. Here's my story so far:

Good espresso in Phoenix area?
Just an update: I only made it to two of the places listed. Bunna Coffee - pretty lousy and starbucks-like. Coffee Shark was the other one, and it was really good. And, they have a drive-thru, which made it easy when my girls were sleeping in the car. Thanks to everyone for the suggestions

Adjusting Rancilio Silvia brew pressure (OPV)
I received my new PF pressure gauge today and checked the pressure on my (new-style) Silvia - looks like about 10 bar. I'd like to adjust the OPV down, but before I start screwing around with the internals, I'd like to hear from somone who's done it already. I took off the top cover to take a look
