I characterize it as syrupy rather than creamy. The whole experience is a bit like drinking an orangina, that pulpy, syrupy, super sweet Italian (or is it French?) soft drink, if it were toasted and had roasty flavors too. More quantitatively, it is lighter bodied than a conical for espresso, but th...

Mazzer Philos Grinder Review

A short final post on changing burrs and resetting the grinder's zero point. I swapped in the SSP MP burrs into the grinder: {image} and want to report on some of the things that came up. First off, when I tested the MP burrs in the Jolly, I hated them -- thin bodied, no sweetness, and diminished ro...

Maybe my statement was too general. But the P64 has an augur-like cap on the rotating burr. It may improve the performance. {image}

Since there is an augur and the shutter is closed (see below), popcorning is not an issue. Like all single dose grinders, it grinds slower for single dose than if you load it up (say for seasoning a burr). But the speed differences between fine and coarse grinds, or loaded up and single dose, are no...

The genetic history of modern coffee cultivars

Wow! Thanks. This is much better than the articles I've seen previously. The picture you reprint shows how most of the genetic diversity of Arabica lies in Ethiopian varietals. That we knew; but the rest of the article traces the lineages of each of those varietals back to the orginal Canephora/Euge...

Moving to a flat burr grinder from Sette: what's the best option available in EU right now?

Make a checklist for yourself. 1) are you dong sngle dosing or on demand grinding? 2) Are you using the grinder for espresso and low acid roasts only, or are you going with more acidic roasts and other kinds of brewing. The good news is that 64mm grinders are good for all these options; but you want...

I'm not sure what grinder you are referring to as the 078s. My experience with 64mm grinders is that properly built ones do not need adjusting - how many people have had to shim Jollys or Lagoms? There are a lot of junky DFs, which need aligning or can turn out to be unalignable, but good grinders h...

Any Benefit to Slow Grind Speed

My experience with the Lagom P01 with the 98mm Mizen burrs has been negative for slow to medium grind speeds. There is a change in grind adjustment, slower speeds requiring finer settings for the same dose and timing of espresso; but the taste is unchanged, at least given the five minute gap in tast...

The Philos grinder has very distinct clicks. However, the scale goes from 0 to 145; so a lot of clicks. I have no idea what it is like to use a grinder with low vision. But my inexpert suggestion would be to use a different tactile decals at the brew settings, and at the center of the espresso
