Your equipment and routine appear to be sound, what beans are you using? The beans are important (critical). The must be high quality, artisan roasted, and preferably roasted within the previous 2 weeks prior to brewing. If your beans aren't roast-dated then they are almost certainly far too old

Mazzer Robur grinds retention
