Brewing Altitude Compensation?
I live at 4500ft and regularly spend months at a time at 5-6000ft. My Bonavita kettle is set at 192 or 197 depending on the coffee being used in my v60. I have never had an issue

1L Manual Filter Brewing
i plan on ordering a Bunn Phase Brew Funnel($15) {link} along with the appropriate filters in an attempt to mimic the flat bottom brewing of a fetco. I'll brew into my 1L Hario 03 pitcher. Hoping this will make for a more even brew bed compared to running 60g of coffee through my v60 size2

V60 02 capacity and technique
I regularly do v60 brews with 42g/700 up to 60g/1000. i adjust grind size to keep brew times to the 2:15-2:45 time frame and play around with different pour techniques and amounts of stirring

Heart Roasters low pressure espresso
I've played with lower pressure extensively on my Portaspresso and also on my Strega. I'm currently pulling 19g in 38g out shots of a light filter roast natural Ethiopian. The shots are amazing and very similar in color to the photo of the OP. Amazing flavors, reduced mouthfeel
