Black and White Classic help
I haven't had a problem with too fresh causing gushers, but that's just me. Could you be grinding too finely causing channeling and gushing instead of an even extraction? Hows your extraction pattern look (if you have a bottomless pf)

Best instant coffee?
I mean good as in "wow, this is better than most of my own drip brewing on my Vario" BUT, im not a drip expert or aficionado. I do enjoy it, but espresso for me please if at all possible

Best instant coffee?
I've had a number of B&W instant coffees and they're excellent. Highly recommend for when brewing your own isn't possible, or you're too lazy. They're not cheap (about $3/cup), but they're very very good

Further info, this is a polaizing coffee. My wife cannot drink it in her cappuccino, she said it tastes "spoiled". I can definitely see that being used as a descriptor. this is the coffee i'm referring to: {link}

Large flat burrs and fast shots
Old thread but I noticed the same thing when I got my monolith max SLM burrs. I found it really easy to overextract coffees. I assumed it might be because given the better unimodal distribution of a huge flat allows me to grind finer without choking the machine
