Niche Zero vs Monolith Titan
I think a lot of, if not most, people given enough experience would be able to taste differences. I think palate goes through coffee tasting learning process. The more you taste the more you can taste. Of course ability varies with the individual. In my tasting with few other guys we could consisten...

Decent DE1+ vs Modded Breville Dual Boiler
My experience is in line with this as well. Not only does it not "heal" the puck, water distribution is so bad that you end up with craters on top of the puck like 90% of the time which is for sure not helping with extraction. Which is why you see people putting paper filters on top of the pucks

Why TDS/extraction yield measurements are not a good way to evaluate taste profile/quality?
Not really. You can visibly move center and outer burr on Niche by hand so they will "walk" once they start grinding

Why TDS/extraction yield measurements are not a good way to evaluate taste profile/quality?
At least in case of Niche, Niche will have noticeably different enough particle size distribution just because of all the play in shaft and outer burr carrier. And its not little play, its visible by the eye play. So the burrs will "walk" around as they are grinding and bell curve of particle size d...

From my notes when I compared my Monolith Conical 2ndgen and Niche, I noted muted flavors from Niche and fewer flavor notes. I wrote down flavor profile as "simpler" than my Monolith. I could not measure extraction since I don't have instruments. This seems like its inline with what you are tasting....

When was the last time you changed the burrs in your K10? That might be the reason for inferior shots from K10, or its perhaps misaligned. Also, Niche uses stock Kony burrs, no tweaks

Monolith - Awaiting Feb 2019 Shipment
If you are running at 200 RPMs 3 is not too fine in my opinion. (edit: actually 3 is not too fine even for 550RPM, with some light roasts I'm there as well) But 200 RPM is really, really low, run it at recommended speed of 550 for SSP burrs or 450 for Italian style burrs. There is really no
