Recommended coffee/espresso in Mazatlan, Mexico?

How to store coffee beans?
After receiving the beans from the roaster, I let them rest 7-8 days and then break up the 5 lb bag into 6 oz Ball jars and put them in the freezer. Six oz is about enough to last me about 5-6 days which gives me that 1-2 week sweet spot for my beans

Who's got your favorite decaf for brewing as espresso?
My wife loves her 2/3 Olympia Decaf Asterisk + 1/3 Dune Zipzinger that I blend for her each morning. In the afternoon, she drinks the Decaf unblended. She loves it both ways

Well, OK then, crickets it is. So, I'll reword the question. Are there any coffee shops is Estes Park that won't make me throw the cappuccino in the trash or at least can make a decent pourover? I have lower standards when traveling

Heading there in September. I can't find any good recommendations. Myself and my wife and her sister all appreciate a tasty cappuccino and a nice local pastry to go with it. Is it a wasteland? Thanks, Jim

Defects and "Defects?" Poor Quality Coffees?
Could it be from overuse of the land, depleting the organics and minerals that give the coffee its taste profile?

I'm not a fruit forward guy. Shorter pulls (28 sec) gave me too much fruit so I dialed it out so it's a background taste and secondary to the chocolate. In fact, I think I had to play with the extraction time and the volume to get it where I wanted it

Zip Zinger has been my daily espresso for about 2 years now. After my second yearly December vacation in SB and several in store visits, I brought home my first 5 lb bag. I live at 7000 fet and I found my happiness at 17g in, 32-34g out in 31-32 seconds at 98°F
