Adjusting flow rather than dose & grind

Ingenious. That reduces the backwards thinking for sure. What about brew temperature to modify bitter/sour? Maybe terms "increase flow" and "decrease flow" are slightly better. Maybe drop "less" and just use simply bitter, sour, bland, intense. Other flaws: flat- Fresher beans. Burnt-roast less. No ...

Commercial vs. Home Espresso Grinders

I think if you had both machines in your kitchen side by side you would sometimes notice a difference. But really, you will likely not prepare coffee on both, blind taste test, etc. and so will *almost* never notice which grinder is best. For me I was perfectly happy with my Mazzer mini, UNTIL I had

Commercial vs. Home Espresso Grinders

If you want the K30 then should wait another month and get the Mahlkonig Peak. Im waiting for it too. Or at least better info that might make me rule it out

Tipping standards going up?

Ireland has no tipping, service is included in the bill. If you like your service, thank the waiter. If you dont, vote with your feet and go elsewhere next time. Works better IMHO. Why does every carryout have a tip space? I always leave blank. Anyone tip on carryout? And finally, im an anesthesiolo...

Tipping standards going up?

Ive noticed the increased percentage requested, frequent predetermined tip estimate on bill, and especially new situations where tips are requested (almost anything on vacation/fishing etc). Im sick of it. I think tipping is increasingly becoming a way of dodging income taxes, of which at the same t...

Roast and Learn Together - May 2015

It would help for us newbies if the acronyms were used a little less. Most roasting posts I have to read at least 3 times before I can understand most of what is said

Improved grind setting rings for Mazzer & Macap grinders

So I just finished replacing my Mazzer mini-E burrs with Super Jolly burrs. I had installed the grind setting ring on a couple of weeks ago, and it is glued on pretty well with spray adhesive. When I put the setting ring on I placed "0" where the burrs just started to click. All my espressos pretty

Suggested Espresso Parameters for a Gesha

My panama esmerelda gesha produces the best pour over coffee I have. I did a blind tast test with about 20 differenct brands and could easily pick the gesha every time. When I make espresso, not so much. To me it doesnt taste any better than many other beans when ground finer and run through my Rocket

Improve Texture of Microfoam

I have the same problem with my Rocket 56, about 3 years old. I improved things by using whole milk, tip with the fewest orifices of smallest size (takes longer but maintains higher steam pressure and makes better foam), and frothing less milk at a time, maintaining a roll in the pitcher when steami...

I'm a Starbucks barista; Tell me everything you wish I'd do differently.

Agree with last poster. I only drink lattes. When im trapped on interstate system long drive and need a coffee fix i will occasionally go to starbucks. I would be completely shocked if the milk was properly microfoamed and would drop over dead if there was an attempt at latte art. Alas, always over ...
