Struggling to find a good yet small grinder
Macap M2 is just over 15" high but isn't stepless. What about a Eureka Mignon/Nuova Simonelli MCI/F? That's pretty tiny and has some favourable reviews

Zero cost adapter for portafilter pressure gauge
That's brilliant! I remembered your post when I was making my own portafilter gauge and cut a couple of rubber washers from an inner tube. No PTFE tape required... Sealed watertight to 12 bar and easy to lightly unscrew from the portafilter to let some water leak out to simulate a shot. {image}

Given from that and your shot glasses it looks like you work in a lab, I'd suggest forgetting about volume and weigh the shots instead. From there try playing with the brew ratio (mass coffee/mass shot) by dosing more/less and changing the grind and see if a more ristretto style extraction improves ...

Macap M2 Review
Burrs are 50 mm. They have Macap stamped on them so I guess they're unique to this grinder. I've seen the M2 for $460 on a US supplier's website (not sure if posting links is allowed). I bought it from a shop in Italy and with the £/€ rate at the time it worked out at £250 which
