High end grinders that are ideal for drip coffee
I don't wanna throw a wrench back into your decision but I had to chime in here. I have used a few stepped commercial espresso grinders in the past (VFA N1664 & Macap MX) for multi use and I found they are pretty versatile. Mind you both were doser models so I got nothin to say in terms of

Settling grinds before tamping?
I also discovered this and it's really helped my prep. Once I fill the basket I tap the portafilter against my hand a few times to flatten the mound than a few taps on the tamping mat. It's allowed me to pull beautiful bottomless shots without any channeling at all for a while now

Quick shots with the Rancilio Silvia
+++1 pre ground coffee's gotta go. I agree that you will need a capable espresso only burr grinder in order to get good espresso out of the Silvia. The seller should have directed you to some fresh whole bean coffee and possible up sale of a grinder

Seeking new espresso dedicated grinder, budget around $600
I've never used the Vario but I love the stepless adjust on the Macaps. Worm drive is nice and smooth and does not drift. Minimal effort to adjust compared to the Mazzer SJ. I am able to dial in easily and I still have a ton of room for extra fine settings for light roasts or ristretto

If your considering an HX machine then forget single boilers. The Silvia or CC1 will produce a good shot but a larger HX will beat it. Rebuilding a rancilio z9 (220v) and rancilio MD 50
I rebuilt an old VFA a while back but not a Rancilio. I would start by dipping all the piping in descaler and taking the boiler in to get acid dipped. If your using the Skerton for drip, press and siphon it's not a bad grinder. If you include the OE PFP mod it improves course grind quality immensely. If your busy you should look at the Encore. Has more than enough room for drip, press and siphon brew. I own the Skerton with the mod and have used

Others may hate me for saying this but I think the Silvia is a good bet. I am also a single drinker in the house and it's perfect. If you learn to temp surf or get a PID and your using a good grinder it can produce great shots! However It's not really worth the price tag anymore
