Baratza Vario won't calibrate
Thanks to both of you. I finally got to the macro screw under the rubber cover, and it worked perfectly. My Vario is now calibrated at around 2Q (mine is not a Vario-W). And I am able to choke my espresso machine if I want, what a great feeling

As you might know allegro doesn't give roast date on their coffee. The store I picked it up says it's good from 10/13 to 1/25. I guess it should be within 10 days

Allegro Esmeralda Gesha at Wholefoods
Wholefoods has the Esmeralda 1500 Gesha at some of their stores. I picked up a bag (12 oz, $19.99), and tried out using Aeropress with fairly long steep time. I got plenty of tea and fresh acidity but not much of the floral part of it. Anybody tried this?

Bezzera Strega - up to pressure time
Now I realize what's happening. Over the time I have changed my flush routine. At the beginning, I flush for 2-3 sec and go. This might sound silly. After 10 or 15 seconds the pump quiets down. I'd assume the pump has reached the maximal pressure. If we don't lift the lever, the pump will kick in again when the flow starts and pressure falls below the maximum. So now my situation is that it takes the pump longer to reach ...

Gary, I'd agree it's definitely not a dark roast, but it's comparatively easier to bring out the chocolate/nut flavor than other Yirg espresso roast. I run on a Strega with Baratza Vario grinder.
