Good question and good posts I recently decided to go for the Ponte Vecchio. Within 14 days I was able to compete (to my own taste!) with the best shot I can buy at the shop. The spring can do the work for you, but you can manually slow it down which is great when having tuned

How to get sweetness from a single espresso?

+1 on the cooler temperature Especially for highland coffees I am able to get wonderful sweetness with lower temps. On the Ponte Vecchio, I do this by running the machine as soon as pressure has been reached and then pulling the shot slowly on a cool group head which allows for the heat to dissipate...
