Preparing cappuccino for guests

My double cappuccino workflow is: Fill pitcher with cold milk for 2 cappuccinos Prepare portafilter for shot of double espresso Cooling flush into cup 1 (I have a HX machine) will also pre-heat cup 1 Put portafilter in and pour hot water from cup 1 into cup 2 Brew espresso and steam milk at the same...

Triple shot 22 gram basket.

What matters for the taste is the ratio of grams of coffee in the basket vs grams of coffee in the cup. This ratio is roughly 1:1 for ristretto and 1:2 for regular espresso. Or anything between those 2 values or above to get the taste that you want. That means that with a bigger basket you aim for

Can I use an acid to lower KH?

I understand it would be better to just take the carbonate out without adding other ions to the mix. But between brewing with a high KH or the alternative I am suggesting, are there any other considerations but taste?

Can I use an acid to lower KH?

My tap water has a GH of 150 ppm and a KH of 150 ppm. I can get the GH to 90 ppm by using a Sodium ion exchanger and mixing with tap water, but that leaves the KH the same. I found that I can lower the KH by adding vinegar or citric acid. Any thoughts on this

Boiler safe water in practice

If the water going into the machine has the same GH as the water going out of the machine, then no scale has formed, regardless of the KH values. There is nothing here that contradicts Jim's water FAQ. This holds for any machine, not just a HX

Okay after some more measurements, I can answer my own questions. It is indeed the case that it just takes a long time, like 4 hours or more, before scale starts to form if the water hardness is just above the equilibrium. I had filled my boiler using water with GH of 2 dH and KH of 8 dH

Measuring with an aquarium test set using drops. I emptied the machine and filled the HX and boiler with tap water. I collected water from the group head and from the hot water tap after the machine had been idle for 1 hour, throwing out the first bit of water that was in the lines and without using...

Yes for theoretical calculations you need the KH to compute what is the safe level of GH. But I am arguing that in practice you can just check the GH as any scale that forms inside must drop the GH value

With safe I mean that no scale will form. If the same GH goes in and comes out of the machine then no scale has formed, irrespective of the KH, is that not? Right, my value is off the chart, but I can still use the formulas to compute the corresponding values. With such a high KH, the "safe"
