Why no natural Kenyans?
This is a great question, and there really is no simple answer (to my knowledge). There is, however, a pretty significant list of reasons why natural processing would range from risky to impossible. Most coffee producers in Kenya are very small (like 200 trees or less), which means that they're not ...

Mazzer Mini vs. Baratza Vario-W
Yep, the Vario is the only choice between the two that can do what you want of it. -Dave-

Odd anomaly in roasting results
Yeah, you're right. I posted that in a haste, and didn't give it enough of a look. The inconsistency of the roast was what caught my eye, which obviously could be for many other reasons (one of those being poor prep). -Dave-

Odd anomaly in roasting results
I was going to mention that as well. That looks like a natural. And being a natural, the roasting tends to be slightly trickier and less consistent, in my experience. -Dave-

Espresso grinder - Do I have options with $250 budget?
Go with the OE Pharos. It's the best option for your price range. If you're against a hand grinder, you might be able to find a used Super Jolly or something comparable if you search craigslist for a while. -Dave-

Consistently good coffee shops in NYC
Yeah, the 275 location is across from the whole foods and B&N just a couple block up from WTC. The 401 Greenwich location is on Beach across from the CitiGroup building. Sounds like you probably went to the 275 location, as that's the more popular (and original one). Again, I'm very sorry to hear th...

Consistently good coffee shops in NYC
I'm sad to hear you had such a bad experience. Which location did you go to? The one at 275 Greenwich is typically more consistent on a quality level considering the one at 401 is usually swamped with lunch nonsense. And the Midtown one is just managed loosely and set up poorly (no excuse there). -D...

NYTimes.com: Where to Find Serious Coffee in New York? Everywhere
Actually a really good article. But Farha (the girl in the first picture of the article) was WAY too excited to be on the front page of that section of the Times; I've been hearing about it all day. Good for her, though. -Dave-

Coffee becoming stale or over extracted?
Also, most east african greens in the country are getting pretty old. We've been roasting one recently that just about fell off of a cliff. The roaster could just be using up the last of his/her supply. -Dave-
