Top shelf beans in Denver?

Vacuum storage harmful?

I did not notice the loss of floral/fruit flavors in favor of nut/chocolate/nut flavors when freezing coffee. The only difference I MIGHT have noticed is that the coffee seemed to continue aging for a day or two after being frozen. So beans I had frozen on day 3 behaved more like the never frozen be...

The fact that they know how to pull good shots, then proceed serve a bad shot, AND not care when told the shot was off is precisely what makes the experience so frustrating

Extraction changes drastically, without changing anything

It is probably just be the beans aging in the hopper. As other have said you need to change the grind settings, although I usually end up making the grind finer as the beans age. BTW - The Costco branded coffee beans are not half bad, especially when considering the price

I haven't noticed the loss of floral/fruit flavors in other blends, but I since I tend to prefer chocolate/nut flavors it is possible I wouldn't notice. I just got two blends, in two pound bags, that I sealed and froze 8 oz portions. As I use them I will pay attention to any change in flavor profile...

It believe it was Belle Espresso from Klatch and Ambrosia from Caffe Fresco. Both are primarily in the sweet, chocolate, nut spectrum. I have frozen all types of coffee and haven't noticed a much of difference between them in this respect

Been doing the same thing, vacuum seal with a foodsaver and freeze, for years. I have not noticed the coffee deteriorating any faster. I note the days post roast on the bag and it acts like I would expect when I go to use it. When using part of a two pound bag fresh and part after
