I couldn't agree with this statement more. As a Bezzera Strega owner myself I've had the same experience, and when I dose up and make the grinder coarser while still manually controlling the shot, I get much better lattes. It won't ever be 100%, but the clarity and unique texture in standalone shots...

Dustin, good question, and it was Jim that really figured it out for me. It has to do with the higher temperature of the drum and how it impacts the beans. When using lower drum temps, the outside and inside of the bean can develop at relatively similar rates leading to a more even roast. This is

I guess its my turn to chime in... Yes, there was a small chaff fire due to my laziness in cleaning the roaster! Lesson learned, especially when roasting 1 pound quantities. To be honest, I'm a bit afraid of revealing my methods due to the possible backlash I might receive from more dogmatic members...
