Several questions - Greetings, all. I used to spend quite a bit of time on this forum but haven't been back for years. I have been enjoying this thread on Italian roasted espressos and have made my way up to about page 18. Here are my questions: - Having been brought up in the "use

Understanding the principles of extraction: Fine grind, light tamp vs. coarser grind, firmer tamp
I achieve pretty consistent and satisfactory results with my current technique but would like to hear what others have to say. I am using a Vario grinder and Quickmill Vetrano 2B. Here's my question; I typically grind fairly fine and use a light tamp. If I used the standard "30 lb. of force" tamp I'...

That's how we ended up on this board. In answer to one of your questions, I think you MUST have better grinder. Give...

Brewing ratios for espresso beverages
I'm so glad somebody posted a link to this thread. It's been great reading but also a great inspiration for reexamining my shots. And basically getting closer to 100% ratios and ending my shots earlier. Really fun stuff. Of course, its probably only fun for geeks

Espresso volume, crema and net shot size
I dose at 17 grams or so for a 2 oz. double. Initially, more than half the shot is crema. I notice that as the crema settles the remaining net size of the shot is a little less than 1.5 oz. This got me thinking of a couple of questions. 1. When folks talk about a typical shot

Caffe d'Arte follow-up: I am now trying a pound of their organic, fair trade, swiss-water-processed decaf. It is totally different and I think I'm really going to like this one

Seattle barista training?
As a fellow Seattle area coffee lover, and after a year of messing with espresso and moving from Rocky to Cunill El Tranquilo to Vario and from Gaggia to Oscar to Office Pulser to Brewtus II I've decided I'm now a beginner. There's just so much to learn. I'm planning on improving my skills, in parti...

Nominees for "Favorite Espresso Blends 2012" review
Do you know what temperature you are at? I would not describe any of the flavors I am getting as bitter, but right now I am pulling their Parioli and the decaf espresso. I probably have gotten some slightly bitter flavors from the Capri, but in general I've found that blend very palatable. For the m...
