When people say "sweet espresso", does it actually have sweetness?
The OP referenced his bitter cappa's also. When milk is steamed properly it tastes almost saccarine to the point that adding sweetener will bring it over the top as far as being unbearably sweet. The ability to get your milk to consistently taste like this is arguably easier than getting your shots ...

Quick look at Breville Dual Boiler Espresso Machine
The most interesting aspect of the BDB(?) to me is the PID controlled SS group. I know you were pounding out shots on that thing, but it would be interesting to test its walk-up-and-shoot performance

Looking for conical, doserless and flexible grinder
In a typical dose from my K10 there are a few clumps and it is the doser that breaks them. Wondering why you would associate doserless (and presumably a timer/or eyeballing volumetrically?) with consistency? You may be very disappointed with the efficacy of this criteria... EDIT: Must be losing it, ...

Just a little advice: With few exceptions, Synesso's are the de-facto stamp of approval for cafe's capable of good coffee around here. If you see any La Cimbali equipment, turn around and walk out. Oh, and bring warm clothes
