My Christmas present from my wife was a set of illy cafe freddo glasses - so I'm interested in any recipes (I did search for it - but didn't find anything here). It's an iced espresso drink with simple syrup. What's the best way to do this without making it too watery? Lots of ice & strain it?

I've never heard of "illy freddo" glasses, but of course google has:

There's also lots of definitions (e.g., ineedcoffee's "Begin with a double shot of espresso. Pour your drink into a cocktail mixer with three ice cubes. Shake well. Strain it into an empty glass. If you do it just so, you should be able to obtain a long-lasting, foamy crema on top of the drink."), most of which simply say chilled espresso, others that suggest adding milk, cream, or even ice cream. Although I've never tried it, I would chill the (dry) shaker to minimize the amount of ice necessary.
