Bella is a relatively flexible gal. When I train someone with it for a commercial application I always suggest 20 to 21 grams for their dose. In some cases though, when the trainee is going to be using an Astoria, I have had to teach them to dose to 17-18 grams. In that scenario, I would suggest that the shot run around 23-25 seconds and slightly less than an ounce per shot. I actually part timed at a store where I could only dose about that much and I found that it was completely workable once I toyed with it a little bit. She was still as red as ever
As far as brew temp, we have our machines out here set at 201-202. If you get much higher you will start to lose her front end sweetness. Let me know if there is anything further that you need and in the mean time, tell Tom and the other guys down there that I miss them terribly.
