This is a coffee Paradise Roasters sells green or roasted as an SO espresso. I reviewed it on Coffeecuppers in March, ordered a good lot, and have been working with it since then. Most of my review stands, but contrary to what I said, it can be roasted well into the 2nd crack if one raises the heat slowly **after** the first crack, rather than before it.

As has been said, it makes a very good SO espresso, one I personally prefer to the Daterras; however, I'm beginning to appreciate what a fine blender it makes. The mild cocoa, almond and cherry flavors do wonders for blends with African or Indo beans; almost like adding a string section behind some edgy solo instruments.

In general, blending varieties are the Rodney Dangerfields of the coffee world; they get no respect. Moreover, with the trend towards SOs, they aren't even getting bookings. Well, I like good blends for their balance and finesse; and I've spent last year without a good Brazil blender, and have been struggling with totally stellar beans to get a stellar espresso blend. No dice. Everything I tried was either unbalanced or muddy. With the Yellow Bourbon, it's become a total no brainer, everything I try works well, and I'm left with the pleasant task of refining something already good, rather than trying to find the magic proportion that'll balance a bunch of prima donna beans.

So, if you want to try your hand at blending, give the yellow bourbon a try; even a kazoo sounds good with a philharmonic in the background.

There is a screen dried process available of the same coffee, and it is just a little sweeter. A really great SO shot, and a coffee that made an appearance in a WBC finalist blend as well.

Great farm, great coffee.

I have been looking for a good Brazil. One of my favorite blends is heavy in Harar and Java with a splash of PNG, sounds like this would make an exceptional base. I have been using some Poco Fundo coop I got from SM. Pretty good, but it experiences a 'flavor shift' as it ages beyond a few months. I can already taste a shift in the blend. I will have to give it a try. I have some of Tony's (caffefresco.us) Daterra reserve espresso in transit, this would make a nice espresso comparison.

Thanks for the pointer.

I roasted a few pounds of the Yellow Bourbon over a couple of months and enjoyed it immensely. I did blend with it but kept finding myself sneaking back for yet another SO shot. I recommended it as much as possible. Must, not, get, more, green.

Kingseven,

We recently (about a month ago) got our hands on the screen-dried version of this coffee. So now all our Brazil YB Fazeda Cachoeira is screen dried not patio dried, and will be for the foreseeable future. Great coffee as an SO, blender or as drip.

Yes,

the Green as well. All the green coffees are the same as their roasted counterparts. All our coffees are available green, including espresso blends and auction coffees like our Bolivia CoE Calama Marka (1st place) and Best of Panama Palo Verde (6th place)

I have 20 pounds of green in transit from the greencoffee.coop, looks like I will have to get some more. I can see the wife's eyes rolling already...

First post here, so hi to everyone

As well as the standard Cachoeira, I am also a fan of the Cachoeira Canario which is a sub varietal of bourbon and is an experimental lot on the farm. Only 8 bags in total produced this year. Just a different planet of Brazilian coffee.

Gabriel (who's family owns the farm and he is the farm manager) is very keen to keep pushing the envelope and trying to develop new concepts. I was lucky enough to meet him in Bern and nearly fell over myself and went all girly, rambling how much I love his coffee and how he changed the whole way we now buy coffee.

One of my all time favorite farms for sure.

Steve
