New convection oven from sunpentown

sunpentown came out with a far infrared convection oven (SO 2007) with a wok base that i was interested in trying out. just finished the project with a variable speed stirrer and dry ice flakes as quencher

Great!
The nano carbon heating element is fast, almost instant!
I added the fuji xpr3 with 1/8" thermocouple and rs485 to usb interface to hook up to my laptop (can work without the interface and just use the stand alone pid) , took out the timer and temperature switch, added heat reflector (heavy duty aluminum foil) and insulator (silicone rubber foam 1/8" that can withstand 450) to cover the outside of the glass part, used an old sewing machine as the variable speed stirrer (clockwise). The chaff is blown off of the dish (by the convection fan which runs at 2000 rpm (counterclockwise) containing the bean into the bottom piece.
the ramp up time from 68 to 400 indoor empty decreased from 5 min 18 sec to 3 min 30 sec, a 30 percent improvement with the reflector and insulator added.
this unit is basically a manual unit, you need to determine the roasting profile and you need to dump the finished roast to another container for cooling - that is why i am using the paper clip for quick release. I used dry ice flakes to cool the bean to around 200 some degrees and then let the bean cool to room temperature.
I own the sirocco, alpenrost and I-roast and personally, I think the roast I am getting is better than what I can get from the other roasters, but that's my own opinion.ImageImageImage
