Now I have to work on finding the perfect bean in Paris. My goal, a cappuccino as good as the capuccinos I get in Calabria near the beach.

... and somewhere in there try to find time to thank everyone on the forum who was trying to help you ;) Seems to me you had a little bit of an RTFM problem there.

It seems my big mistakes were dose, and I was grinding much, much too fine. He reduced the grind from a 9 to a 4 1/2. He also showed me how to make a ristretto by starting to pull, and stopping just after the coffee flows , for a second or two, and then restarting for a few seconds only.

Of course as soon as he left I tried to imitate exactly what he did, and it didn't work quite as well. But I did manage to pull a good shot after a couple of tries.

Great news! Now you have taken the first steps and believe me that it only gets better from here :)

To everyone who were so helpful, -thank you. I will now attempt a ristretto.

PS, to the last post who asked about the Kitchenaid...4.5 was much coarser. The technician said the blades in the kitchenaid are not the right kind to use for the level of the machine. He said the grind was too uneven to use and get good results. I have to say, I witnessed this.

Dose, I'm at about 9 grams in a single basket.

johney5, congratulations and good luck. You must have come onto a good vendor if they made a house call (for a fee or not). Glad you got things worked out. 9 grams in the single sounds much better, and it sounds like a new grinder will be in your future.

Keep us posted on your successes and failures :) ... and welcome to the HB Forums.

I am the new owner of the Anita which is similar to the Andrea. I have also had problems getting a good shot. I roast my own coffee so I know that it is fresh. What I am finding out is that I am grinding way too fine. I was using the settings that I had used for my old machine and this does not work for the Anita. Now that I have changed to a less fine grind I am getting much better crema. My grinder is the Cunill Tranquilo.
