Hi,

Looking for a 50/50 blend that will give me full body strong smooth flavor, low acidity and on the chocolaty side. These are my green bean options:

Brazil Cerrado Green Coffee Beans
Colombian Green Coffee Beans
Ethiopian Harrah Green Coffee Beans
Ethiopian Sidamo Green Coffee Beans
Ethiopian Yirgacheffe Green Coffee Beans
Guatemala SHB Green Coffee Beans
Indonesian Java Green Coffee Beans
Kenya AA Green Coffee Beans
Papua New Guinea Plantations A Green Coffee Beans
Sumatra Mandheling Green Coffee Beans
Brazil Cerrado Green Coffee Beans
Colombian Green Coffee Beans
Indonesian Java Green Coffee Beans
Kenya AA Green Coffee Beans
Papua New Guinea Plantations A Green Coffee Beans

If any of these suit I would also like recommendations on when to stop roasting for example "stop at 2nd crack, or stop 1min into second crack) etc. I could probably go with a 33/33/33 blend as well if needed but to make life easy a 50/50 would be ideal. I can then roast 2x200gm batches and have enough to last me 4-5days at a time..

Thanks!

Something Brazil 50%, Ethiopian Harrar 50%, roast to vienna about 30s into 2nd crack. I have used Brazil Camocim Yellow Icatu + Harrar and obtained a full bodied, low acidity and chocolaty espresso with a nice hints of blueberry.

You might also try 60% Brazil, 40% Harar, with a shorter roast time. Stop the roast just before the second crack or a few snaps into it.

It appears there is a trend here, I was about to mention the same Brazilian/Harar blend. I roast to just before 2nd. The Harar can bite you in the back of the throat depending on how much Harar in the blend, and how long roasted and rested. If you are getting that bite, roast longer, rest longer, or use less Harar. Or maybe you like the bite (I don't). All of my espresso blends include Brazil or Harar, usually both.

Are you guys preblend the Brasil and Harar? I have also tried to bring in some Colombian or
Guatemala (50% Brasil, 25% Harar and 25% Guatemala), also very interesting.

Best,
