I can't believe the consistency I'm achieving. Good stuff, I mean.
Shot after shot, even my singles are beyond my expectations.
I have discovered my liking for SO's in her. A melange of city+ and city++ Ethiopian dry Koratie was almopst overpoweringly berry, with bittersweet cocoa. A 9oz latte after the double shot was better than anything I've ever done.
She steams like a demon, 18-20 seconds for 6 oz milk...wet, thick and sweet. Almost too fast. Do they make a 2 hole tip for these things?
Please, I'm not bragging here (at least trying not to). I'm basically just overwhelmed by my success with my now perfectly operating machine, that thanks to Barb and Doug.
After I failed to suss out my problem (no steam), they kindly asked for it back, and found that a seal in the steam assembly (a new one) had somehow come apart in shards. They replaced it free with a new viton rubber one, and sent my machine back promptly.
It's been heaven since then. Now my PeDe grinds fine enough for it, as there is pressure for days. Totally consistent temps. I almost think the use of a Caravel they lent me (before I then shipped it to Richard Penney for some beauty work) may have settled me down, and taught me focus on lever technique, feel, etc.
Sorry to gush. Maybe it's the 3 doubles, 1 single and a double cappa. :lol:


Using the Caravel also pretty much proved to me that a basket filled to within a mm or so from the top works best (for me). No channeling in the Newd PF.

Yes, I've been not-so-quietly suggesting that this technique is better suited for the smaller group, home lever machines. Not sure if its the basket size and shape, or the relatively evenly-distributed force of the water from the piston, or what. I just don't think overdosing is an issue with these machines, but I think underdosing can be. Maybe I should start a thread...

Then there's tamping. In a word, do!

Farm...Jack's point above is well taken. Seems like too much space up there causes cracked pucks for me.
I also think I had some serious issues with my machine, because this is just too easy now. I will confess I was pretty good with a semi-auto (Anita)...not a squirt in several years, but distribution is a bit trickier with these small baskets. I'm more of a Schomer thing now than the Stockfleths I was doing early on, but as long as I have the grind piled above the basket, it's all good now.
I can tamp harder now, as the seals are uber tight. No chokes yet, though I've been close!
I feel a bit more worthy to help others now, if only to return the many favors I've been granted here. (RJ weeping out of view of his web cam) :lol:

While I'm at it, a plug for Andy Schector's Mazzer SJ "Schnozzola" doser exit paper funnel thingy. Makes dosing into the 49mm basket way easier, with less mess.
PeDe much quieter, of course!

RJ----wow! And all it took was two weeks with a Caravel and now you have channeled the force within you, Skywalker. And the Cremina is just "too easy now????!!!!!!". Those seals are sweet....nice and tight. But you are the Nascar driver and we but the lowly pit crew, and too far away to drop in for some complimentary shots. Always a bridesmaid never a bride.
