I'm a little confused by Tim's results myself. I see similar behavior from my Anita (set to 1.25 BAR) as you are seeing from your Vetrano. If I flush to 203, I drop to around 198 w/ a very short spike up to 201, but quickly dropping back to 198 or so. I am seeing the tighter temp band throughout the shot though. I'm having pretty good results from flushing to 206 - 207 degrees.
To answer your other question. IIRC, Dan's testing has shown that the Vetrano is better suited to flush-and-go than the Anita, due to differences in how their plumbing is set up. Previously to purchasing my thermocouple adapter, I've used both flush and go and flush and wait and generally found the flush and wait. (Flush to 203 - 2 oz after end of water dance, wait 30 sec, pull) to be a little smoother than the flush and go. I'm revisiting the flush and go using my temp adapter and flushing as detailed above. Much less harsh than it was than when I was doing flush and go based on time, but I'm not sure the shots are as good as flush and wait. One benefit of the flush and wait is that you can adjust brew temps by adding or deleting seconds from the 30-sec baseline rebound time.
