Agree roasts best rested, brought already roasted too. At beach a couple weeks. Brought copious greens for 3 reasons: roasting for later in the vacation, roasting for good friends who met us there to take home, and introducing a chef friend of mine to home roasting. Spent a Sunday afternoon in his B&B kitchen
(The Shelburne Inn) demonstrating and teaching him how to home roast. He's since become a home roaster for personal use, but not for the B&B. Buys from a small local Roaster for that volume.
