Can anyone tell me how many shots of espresso I can generally get out of one pound of ground coffee?

In the low twenties. See How many DOUBLE espressos do you get per pound of roasted beans? for a related poll.

That poll was before Jim's down dosing expose

Lets see, 18 grams per double? 28 grams in an oz, 16 oz in a pound, 450 grams per pound, divide, multiplied, the answer about 24, then you must knock off a bit for dosing, waste, or a bad shot or two. That puts you in the low 20's. Thanks Dan for the easy answer. Or about 120 beans or so.
