I have a new Quickmill machine (Anita/Andreja Pro). It has a brew pressure gauge and according to it, the brew pressure does not get to where it is supposed to be (9 bar) until the very last seconds of the shot (double ~ 25sec). It takes it anywhere from 16-23sec to get there. In the first few seconds, there is *very* dark black stream. I tamp with a scale, so I know I apply 30lb.

Is this normal? What is normal, how long should it take the pump to get to the right pressure during a shot?

I have had an Anita now for about a month. Once I raise the brew lever, it generally takes about 5 seconds or so for the brew pressure to increase and stabilize at my preset pressure, which I have set at 9 bar. I think this is due to filling and pressurizing the water path from the pump through the heat exchanger all the way to the shower screen and is completely normal.

What kind of grinder are you using?

It sounds like the grind is not fine enough to bring the brew up to the correct pressure. I once kept a bag of pre-ground Peets around to season my Anita after cleaning, but found that the grind & the stale coffee didn't provide any resistance to the flow, and it gushed out a thin, dark liquid at low pressure. Yuck!
