Everyone has finished the Sensory Skills test in the judges' workshop and, as expected, less than 50% of the class actually passed. It's very challenging to be judged on sensory skills. Though the results are disappointing for many, the WBC judges committee decided it was very beneficial to have everyone up to a higher standard for judging at the world level; and creating on criteria the ability to taste, was critical.

Serena and I knew what coffees we were tasting. You can't cup blind when you order the samples each week, but you can fool yourself into forgetting details and try to cup with no preconceived notions.

While the acidity in most coffees fades (and sometimes even disappears) at darker roast levels, this one's acidity held up nicely, even at a roast level comparable to our French Roast. And if that's not enough to convince you, consider that it is also organic and Fair Trade certified! Not bad, not bad at all.

There was a nice lunch, a great presentation by Geoff and various members of the chain followed by a spirited question and answer period, and then dancing.

As far as travels go, we've been busily scouring the globe in order to bring the best coffee to you. Cindy recently returned from a trip to Guatemala, where she was asked to help put on their national Barista competition.

Well, it looks like we made a mistake. We didn't anticipate the outcry that occurred when our fair Sigri was no longer available. . . I got a number of melancholy emails and phone messages about it.
