I have been a professional barista for years, but have never owned a home espresso machine. So Dan thought it would be fun to introduce me to how the "other baristas" sweat the details. I'll compare a semi-commercial home espresso to the machines I know best, namely top-end commercial espresso machines. Unfair? You bet! It promises to be an atypical perspective with a couple surprises too.

hi chris,

great article, and very clear explanation on "pro" flushing the HX.

one clarifying question, when i flush the whole mississippis out and nail the correct brew temp (i think i'll first make use of thermocoupled pf), regardless of idle time, every shot should be the same many mississippis?

I've had a Francis!Francis! X5 for a little bit over a year, and have just decided to upgrade to a "prosumer" machine. After some research, I settled on a Grimac Espressione Uno-Pul that was offered on Ebay. I got it today, and it's a Mia. The seller says the Mia and the Uno are the same, but I'm having trouble finding a spec sheet for the Mia, and I don't want to try the machine until I'm sure it is the one I want.

Somewhere on this site I saw the review on the Mia refer to it as AKA Uno, but it is not listed like that on the review.

Help! I'm itching to rip all that protective film, but am afraid to.

Judging from the pictures I see on the web (compare Uno on cooking.com to the Mia in Chris' review), they are the same except for the name silkscreened on the front.
