I'm roasting with a Behmor for drip. I like to enjoy the character of various single origin coffees but would like to reduce the caffeine content. Can anyone recommend some good decaf "blenders" that won't be overpowering? Is this possible without throwing out the baby with the bathwater?

There's actually a brand of decaf green coffee that's good: "Royal Select." Royal importers have their own decaf water process plant in Mexico and decaf all their regular specialty coffees. These are in essence almost identical to their regular equivalents. A few green vendors, notably coffee wholesalers offer a wide variety of these.

Remember to always roast decaf separately, using the lower heat settings than for caf. With the variety on offer, you can match the decaf's country, or at least continent, to the coffee you like, and create 50/50 half-caf blends. Blends like this should remain relatively true to the original.
