Hi,

I've been reading conflicting info about what to do after the roast is finished and beans have cooled to room temperature. My storage device is a glass jar with seal lid that clamps down. Do I let the beans sit in the open or just fill the jar and seal an hr or so after? I was sealing the jar then cracking it open ever so often for like half a day..

Definitely not in air - Oxygen is a prime coffee staler.

Definitely not sealed as the increasing CO2 pressure will slow the escape from the bean.

Best idea is to punch a hole in the lid and RTV on a 1-way valve. [Any time you buy coffee, cut the 1-way out and save it. I give 'em away like jelly beans. :wink: ]

if i don't have your option yet, what do i do with my 200gms I just roasted 3hrs ago?

Buy a $6000 nitrogen packing system. Make sure you find out the exact time to the second when the coffee is ready to drink. Then consume the entire roast by making 10 to 20 shots inside a 5 minute window.

If you're not prepared to do that, put the coffee in any reasonably light, air and water proof container, store it outside the oven, and drink it. If it's best on the last day you're drinking, roast a few days ahead. If the coffee gets stale by the last day, look up the instructions for freezing coffee.

I put them in air tight glass mason jars and put them under the espresso bar. For the first 3 days I will loosen the ring in the evening to let out the excess gas (from the jar that is). After 3 days I don't worry about it. day 4-5 a half pound goes into the grinder, a couple days later, the other half pound goes in.
