I've got a Gaggia heat exchange machine and just measured the water temperature coming out of the group by sticking a candy thermometer in stream once the machine's been on for about an hour. It is a very consistent 175*. I take it this is too low, no? What should it be? Is this the right way to measure it? Thanks.

It's not a great way to measure, but yes, that's about right. The FAQs list this thread Seeking low tech way to measure brew temperature, which describes the foam cup technique. I used this technique for years prior to the introduction of the thermofilter.
