I'm new to this gig and am trying to fine tune things while I gather more info. What temperature do you have your PID set to for brewing? From the factory it comes at 221...just curious what people think. I saw someone else post at 224 Thoughts?

I don't know which PID you have.

Interesting article although it doesn't address the OP's question. But it does demonstrate that you should wait at least 20 minutes, preferably 40 minutes for the brew temperature to stabilize. I set my PID at 223 usually, but it depends on the coffee, and the only answer to the question is to vary the temp and taste the shots.

Pages 8-9 graphs show the differences between PID set temps and brew head temps. Since the brewing temps for coffee are widely available and sometimes specified by roasters, I assumed this is what would help. I picked the brew temp I wanted then used the graph to determine the PID setting for that temp. You can see the difference changes based on the set temp.
