The water returning from the OPV goes to back to the reservoir, which to me is a poor solution. Better to have it go to the drip tray. Other than that it's a decent machine, and a great buy for the money.

That's IMHO a quite normal and straight forward solution. It's cold water from the OPV when it opens the valve. It is neither polluted nor stale and therefore still usable.
Why would you like to flood your drip tray consistently?

I'd prefer to have unrecycled water to drink.

There is a big difference between a rotary pump OPV (called an expansion valve) and a vibe pump OPV... On the former, only a few drops come out of it; it is usually drained to the drip tray. The pump keeps the set pressure by "recycling" water internally. On a vibe pump, that water rather escape through the OPV, and this is a significant amount of water! Diverting all this water to the drip tray would make no sense: it would be full after only a few shots... On my plumbed-in (flojet, really) Faema C-85, the opv is mounted on the inlet side of the pump, recycling water from the output side directly back to the inlet. Note there is a separate expansion valve that drains into the drip tray.
