OK, I got in there with a makeshift stethoscope and it is most definitely one of the relays on the board. I can't narrow down which one it is however.
If given a choice between Starbucks and espresso, I'll choose espresso every time.

Ground you auto fill probe lead and then unground it and see if the relay triggers on and off.

And get a hires shot of the control board if you can. Good lighting, no flash. That is the best chance of understanding how your board is working in that machine.

I did that and nothing happened. I'll get you some good shots of the board and post them in just a little while.

Here's an electrical diagram of a Cimbali that was posted to HB some time ago - origin unknown. It MAY or MAY NOT be applicable to your machine but at least it appears to answer the J1 jumper question.

I would try contacting Cimbali USA or the closest dealer, supply them with complete nameplate data, and see if they can provide a better wiring diagram.

I looked at them. Good try :)

A macro lens would help, as the numbers are blurred beyond reading.

Also that big sticker covering the part number of the main chip does not help much.

Try using That diagram Eric posted and check your connections.

The diagram has been helpful. I checked and I am getting power on wire number 16 once the relay clicks, which is the only wire not in the diagram. All the other wires are listed on the diagram. I am tracing wire 16 right now...

That wire goes to the inlet valve. I didn't have it hooked up because I was using the tank. Not sure if it makes any difference or not having it hooked up...

This of course jibes with the story I was given about the machine filling.

Well I put the valve on there just for the heck of it. I also tried shorting the wires that go in the pour over tank, as this should I would think cause it to close the inlet valve. Didn't seem to make a difference.
