The brazen is awesome if I'm brewing for more than 3 people. It gets a flavor that's very close to chemex and I have full control over most parameters. The chemex is perfect if I'm brewing one or two cups at a time. The Brazen is not meant for brewing less than 3 cups of coffee, the taste will be different if you try.

Got it, I knew there had to be a reason you had both. There there is the practical side, electricity, or gas, is not necessary for the Chemex.

Replacing my BDB is a VBM Domobar Super that I picked up for cheap and fixed up. Will be interesting to see how it compares. Pharos will be used for the VBM, use vintage grinders for the Caravel. Vario has steel burrs for pourover.

Here is my humble setup. An Alexia and a brand-spanking new Mazzer Mini Doserless with Super Jolly burrs. Haha... believe me... it looks fantastic!!
