So far, I am still settling in with the machine. The temperature control needs to be replaced, as the deadband on the Sirai has gotten to about 0.4 bar; I have an SSR and a PID, still waiting for a TC and an adapter fitting. In the mean time, the shots are well consistent enough to get repeatability and noticeable manipulation of the taste profile. I am still working on actually coaxing the profile I want out, but so far the clarity is noticeably improved over my E61. The acidity at its best is rather pleasant, noticeably higher than the E61 with the beans I am using.

Here is my recent addition. I don't have a pic of my grinder, but it's the Gaggia MDF burr grinder, but my next purchase will be the Mazzer Mini. For now, it'll do just fine. Except I think I'm needing a new knockbox since this one is kind of small for my 58 mm portafilter now.
