Can't hurt, and I would do this, too. But thermostats with a screw-in stud should have decent thermal transfer properties either way.

Before this problem showed up, were you getting satisfactory performance from the machine? As an academic exercise it would be cool to know how different thermostats affected the taste of the espresso. But if it once worked well with a 100C thermostat, then it should work well again.
