Need Pavoni Pub Electrical Expertise

I have a well used Pavoni Pub that I am working on for a friend. All has gone well on the teardown and rebuild except for the dosing/brewing control rewiring.

This machine has an older, seemingly completely unsupported level control box that I need help understanding the wiring logic with.

Anybody have a wiring diagram or any ideas? Working on some more pictures.

In a later process of disassembly, I twisted the 20 year old ribbon cable and 3 of the wires broke. Given the discoloration of the insulation and the breakage, I was not able to fully document it.

Here is the box. Ironically, most of the functionality is diagrammed on the lid EXCEPT for the dosing/brewing function. Pavoni does not have this ribbon cable anymore.

STATUS:

I fumbled around and connected two of the pins (#2 & #3) and the machine started the brew cycle but would not turn off. If I jumper them, it will turn off but this disables the autofill function.

I'm stumped and going to buy a new box unless someone has some insight. I can take more photos or do some more research if someone thinks that will help.

I'm familiar with this model pavoni. Shouldn't be a big deal. However, take note that the push button switches on the front panel are momentary and so wiring two together will not yield the desired result. There should only be so many wires going to the buttons, depending on 3 or 5 buttons. They each use the same ribbon cable. One of the outermost wires is the "hot lead", goes to the star button and then jumpers over to the other two buttons. So depending on which wire is temporarily energised, the corresponding "shot" is measured out.
That particular pavoni uses a mother board with the power supply, group board (wires from the doser buttons go here), a doser board and an LLC board for the liquid level control.
The doser board is the one with a set of 4 DIP switches and doses are adjusted by altering the value of the DIP switches.
Uh, what was your question? No, ribbon cable replacements are not available. But that doesn't mean it can't be fixed. Similar cables are available and worse come to worst, you can jumper some wires to replace the damaged ribbon cable. hopefully w/o having to solder onto the group board. (save the old connector at all costs)
