Damn right, Kees van der Westen himself offers education on machinery.
First is mostly about the Mirage and how Kees modified it to get it stable. Long story short, he used a very long HX injector, a restrictor on top, a long return line, enlarged group cavities and the group is fed from the top line. The cool water that enters the HX travels along the entire HX, and back into the return line since the top is restricted more, flows through the longer return line, up in the group, out the group again and then back into the group. By getting the water to travel twice through the group, Kees was able to get a better thermal stability from the Mirage.
Brilliant.
The second part of the first video is about how some Dutch importers ruined perfectly fine machines, cutting their injectors short to make them more suitable for lungo and cafe creme style coffees.
The second video is about double boiler machines. Haven't watched it yet, but I'm off to sleep now.
