I was not able to attain a consistent brew temperature of or around 200F. I stumbled upon the following.
I started with giving the machine a longer warm-up time. 30 minutes. While I'm grinding 18.5 g of Black Cat in my porlex grinder, I turn the bottom switch on for steam. I set up using a double basket WDT method. I turn off the steam switch and turn on the brew switch ( top one ). I vacate the steam. The moment the hissing stops, I load the preheated portafilter and pull the shot. After 24-26 sec. @ 10 bar a 30ml shot with 75% crema. The temp brew has consistently been 198 - 200 degrees F. after two dozen shots. No more need to froth milk to keep from wasting poor shots. Not bitter or a hint of sour. Just small cups of pure sweet spots. I like to serve with a little Sambucca and twist of lemon rind on the rim.
