Hi this is my first time on a site like this and I desperately need info. I recently purchased for my shop the above machine which seems to be wired for 3 phase electricity, my business doesn't have that, the machine can heat water with gas, has anyone got any info on how to alter the wiring and/or connect the gas to LPG and any other installation know how

Bonjour,
You mention that 'it seems to be wired for 3 phase'. Does this mean that the electrical plug on the machine is for a 3 phase socket? If so, then it may be possible to reconfigure the heating element connection to permit the use of a single phase cable/plug; however you should consider having an electrician to do any such modifications (particularly if you are in a commercial setting) to ensure that it is safe and complies with any relevant regulations. Also, depending on the required duty of the machine if you configure it for single phase operation, then it will take longer to heat etc and may not keep up with required demand if you are making many coffees in a business environment.
As for gas connection, I'm not certain, but I suspect it may not meet the EU norms to have it running on gas. Some machines that are capable of running on gas have had the gas components removed (to comply with certain norms). I have a couple of old lever machines that have had the gas connections removed for this reason.

thanks mouldy since posting that, I have found a local electrician to come and change it to single phase your comments on heating up time are valid but if the coffee business takes off i will up grade

Out of interest, what beans will you be using? (do you have a local roaster/supplier)?
Just curious as I have found it difficult to locate good quality fresh beans in Paris.

at the moment i don't have a bean supplier cos i haven't opened yet but I personally use arabica colombian available in most supermarkets, when I open I will use the Metro cash and carry or Cafe richards in Flers in orne dept 61
I had the electrician make the change for me connected the water only to find no auto fill, I have spent a day with a cimbali technician on the phone from england, I stripped the whole water inlet system and found the worst ever case of calcium build up. I eventually at the suggestion of the tech drill out the inlets and now have a full working machine complete with a Rancilio grinder loads of cups and saucers all for 300€ and a days swearing at the previous owner.

My cimbali had a bad case of calc build up in the pipes even though I have rectified this I think the boiler might need descaling is there a straight forward way of doing this, I live in a soft water area but i think the previous owner didn't

Scale buildup can be minor or heavy. Below is an example of heavy scale buildup:
