Inconsistent pressure/grind setting with same coffee

I am now on my fourth bag of beans from the same roaster, and have been buying a new bag every week.
My machine is a Breville Infuser 840 and I am grinding the beans with the Baratza Forte AP. The pump in the Breville was just replaced.
With the 2nd last bag I was able to choke out the machine with a setting of 1K on the Forte AP and was pulling good shots with a setting of 1N towards the end of their life (2 weeks from being roasted). At the beginning of the bag I was pulling 30 second shots with a setting of 1Q.
With the newest bag (roasted 6 days ago) I wasn't getting nearly enough pressure even with a setting of 1N.
Tamp pressure and grind amount are the same.
What could be going wrong?? Its the same bean, same roaster, but just a different batch. HELP!!

That's pretty standard. Even with the best-of-the-best roasters I have stuck with for a while, there is significant deviation from batch to batch. So many variables. You just have to make adjustments when you get a new batch.
